The vineyards are farmed entirely organically in the Salento area of southern Puglia. Towards the end of August, the grapes are hand-picked with great care. After the harvest, the grapes are not crushed and are left mostly intact. This improves the color extraction process.

The color of Zensa Primitivo is deep ruby red, with a complex fragrance. Cherries, dried berries, and toasted almonds resurface in my mind.
