Tommasi Graticcio is produced from own vineyards located in the Valpolicella and Bardolino Doc areas. 10% of the grapes are partially dried for about 1 month prior to pressing and then blended with 90% of the same varities that are fermented fresh. The wine is then aged a few months in oak barrels. This is an "Appassimento" wine.

A medium-bodied, vibrant Corvina, Rondinella and Merlot red wine blend made in a similar method as Amarone wines. Concentrated with spicy dried fruit, dark cherry, ripe plum, savory herb and nutty flavors rich on the palate. 'Graticcio' is the term for the traditional bamboo racks used for air-drying grapes after the harvest; a technique that concentrates the flavors in the grapes. The intensity of the bouquet and taste of these wines perfectly capture the essence of the Venetian landscape. Graticcio is a good match to today’s modern, contemporary cuisine.
